Industrial Seed Oils: the Primary Drivers of Obesity, Diabetes, and Chronic Disease?
-A Talk with Chris Knobbe, MD
Today there is a profound interest in low-carbohydrate diets and a distinct predilection to blame sugar for obesity, diabetes, and even chronic diseases. The American people are more confused than ever. Extreme diets, including strict carnivorism or strict veganism, appear to be at all-time highs. Solid data and scientific evidence hold the answers to these questions. At the end of this presentation, viewers will have a much greater appreciation of the evidence for and against carbohydrates, processed carbohydrates, sugars, fat, seed oils, and even lack of exercise as potential drivers of obesity, diabetes, and chronic disease. The conclusions are striking — and strikingly scientific.
Chris Knobbe, MD, is a physician, researcher, ophthalmologist (in Boulder), and Associate Clinical Professor Emeritus, formerly of the University of Texas Southwestern Medical Center in Dallas, Texas. He is the author of “The Ancestral Diet Revolution”. Dr. Knobbe is known primarily for his research, publications, and presentations connecting Westernized diets to numerous chronic diseases, including coronary heart disease, hypertension, stroke, cancers, type 2 diabetes, metabolic syndrome, obesity, Alzheimer’s disease, autoimmune diseases, and age-related macular degeneration (AMD). Dr. Knobbe’s research has focused greatly on ‘vegetable oil’ (seed oil) dangers and their unequaled contributions to Westernized disease.
