Teaching Chef Monica Corrado will join Barbie Aknin of Community Cuisine for a WAP- focused trip featuring excursions that include local farmers markets, traditional cheese makers, butchers, and farms. WAP-focused cooking classes and dinners with Monica and Barbie featuring the traditional foods and preparation techniques of WAP and France, including bone broths, cultured dairy, lacto-fermented foods, and properly prepared grains. 

Surrounded by mountains, the sea, olive groves, wineries, lavender fields, and rows of cypress, we’ll stay seven nights at the home of Simone Beck, next-door to Julia’s former home.

BACKGROUND

The USDA’s Food Safety and Inspection Service (FSIS) has proposed a new framework to address salmonella in poultry processing. Unfortunately, this proposal is based on a flawed approach to addressing foodborne illnesses and is likely to drive small-scale poultry processors out of business.

Small- to mid-sized poultry farmers across the country rely on these local processors to prepare their products for sale and consumption. Yes, foodborne illness DOES need to be addressed. But we don’t help consumers by creating burdens on small farmers and small-scale processors, of which we already have too few.

You can read more about the details of the proposal below, but the basic problem is that while salmonella is widely present, only a few strains cause illness in humans, and only a small handful of those pose the threat of antibiotic-resistant illness.

USDA has been doing “performance standard” testing for salmonella for a decade. The result has been a lower incidence of salmonella in the processing plants – and yet there is no apparent decrease in human illnesses from salmonella. The lack of connection is most likely due to multiple factors, including the many non-poultry sources of salmonella, the differences among salmonella strains, the flaws in the USDA testing methods for salmonella, and the chemicals used to reduce the bacterial levels.

USDA’s approach to salmonella has created a culture of chemical dependency, in which processors are incentivized to use more and harsher chemicals in an effort to produce a sterile final product (an impossible goal for a raw product).

While most likely not providing significant benefits, this new proposal will harm the small processors who serve as a vital link in the local food chain. Some parts of the new proposal – such as the requirement that every incoming flock be tested – are blatantly more burdensome for small processors who work with hundreds of small farmers as opposed to a huge corporate operation processing birds from its own flocks.

The end result? Small processors driven out of business, less access to locally raised poultry for consumers, and most likely little to no difference in actual health outcomes for consumers.

Your comments can be short and simple. Please include:

•          Why you care about this? (Are you a consumer of locally-raised poultry? Are you a poultry farmer who has struggled to find a processing facility for your birds and/or who would be burdened by the new testing requirements? Are you a processor or considering trying to become a poultry processor?)

•          Three key things that FSIS should do:

a.         Remove Component 1, which effectively imposes testing requirements on poultry farmers for each flock that is brought to a slaughter facility. FSIS should not use its authority over processors to create new burdens on farmers. This provision is blatantly prejudicial to small-scale farmers and homesteaders and the independent small processors who process for them.

b.         Remove Component 3 until and unless the agency provides a clear statement of what levels and what strains of salmonella would be involved. The component currently provides that FSIS will declare salmonella an adulterant in raw poultry based on a certain enumerated level AND/OR the detection of particular strains of concern. In other words, as currently proposed, the agency might declare that infectious levels of the 4-5 strains most likely to cause serious illness are adulterants, which would be reasonable. Or the agency might declare that any levels of any strain of salmonella are adulterants, which would be a completely unreasonable position. Until the agency provides some sort of specificity, stakeholders have no way to meaningfully comment.

c.         Conduct a full analysis of the impact of any new regulations on small plants. Costs imposed on small plants should be considered not only an issue from the perspective of harming small businesses, but an issue for food safety. Small processors are an integral part of a decentralized, localized food system, which provides a safer and more secure food supply for consumers. Thus, regulations that harm small processors reduce the overall safety and security of our food supply. Simply proposing to give small plants longer to comply isn’t a solution when the proposed regulations unduly burden small plants. In the absence of evidence or data showing that these small processors are the source of significant outbreaks, it is inappropriate to blindly impose the same requirements on them as on large processors.

Object to USDA Corruption & Phony “Animal Welfare” Rule

It Will Permanently Institutionalize Factory Conditions for Organic Poultry

Even if, through guidance from our local chapters, we have food that could legitimately be called “beyond organic,” we still need to take a stand against corporate agribusiness corrupting the USDA organic label. Whether it’s rice, bananas, or rations from local feed elevators that our farmers are buying to raise our eggs and chickens, it’s imperative that we alert the political appointees in Washington running the USDA.

The proposed animal welfare rule will legalize the violations that are currently taking place. For laying hens, that means as many as 200,000 birds in a building, packed wall-to-wall and in floor-to-ceiling aviary systems, unable to reach the outdoors. It’s a horrendous life for the birds and, as WAPF members know, defrauds eaters out of nutritionally superior eggs and meat.

1. The existing laws mandating access to the outdoors for all livestock, pasture for ruminants, and soil-based fruit and vegetable production are not being enforced.

2. The pending draft rulemaking will codify the abuses currently taking place on industrial-scale “farms” producing “organic” eggs and meat birds. The proposal would only afford one to two square feet per animal indoors or outdoors. And 50 percent of the space outdoors can be covered with concrete or gravel! These anemic requirements depriving the birds of the opportunity to express their natural instinctual behaviors, which is required by law, are coupled with a rule allowing exclusive confinement for the first 21 weeks of the laying hen’s life.

3. A new approach needs to be developed as an alternative to the tens of millions of dollars currently spent on annual inspections. The vast preponderance of documented fraud—what we assume is only the tip of the iceberg—is being discovered by OrganicEye and others outside of the certification/inspection process. Resources should be focused on hiring experienced agriculturalists/forensic accountants for more comprehensive/periodic audits (punctuated with frequent unannounced inspections and testing).

4. The department needs to prioritize listening to organizations representing consumers, rather than corporate lobbyists who have been appointed to key leadership positions at the USDA and on the National Organic Standards Board.

DEMAND FAUCI BE HELD ACCOUNTABLE!

Director of the National Institute of Allergy and Infectious Diseases (NIAID), Dr. Anthony Fauci, still needs to be investigated for lying to Congress and the American people.

In a January 11, 2022, letter to U.S. Health and Human Services Secretary Xavier Becerra, U.S. Representatives James Comer and Jim Jordan formally requested an investigation of Fauci – stating that Fauci was well aware of the potential that SARS-CoV-2 leaked from the Wuhan Institute of Virology and the possibility that the virus was intentionally genetically manipulated, even though he has consistently told Congress and the public otherwise.

Fauci has spent decades wielding his corrupt influence over hospitals, universities, medical journals, and influential doctors and scientists.  Fauci launched his career during the early AIDS epidemic by partnering with pharmaceutical companies to sabotage safe and effective off-patent therapeutic treatments for the disease.

More recently, he has used his power to flood the public with fearful propaganda about COVID-19 and he is vocally promoting experimental COVID-19 vaccines for our youngest children.

It is imperative that Fauci be properly investigated.  If we can expose Fauci’s lies, perhaps we can put an end to vaccine mandates, passports, and other draconian COVID measures.

1)      Documents released via FOIA litigation confirm that Dr. Anthony Fauci lied to Congress about funding “Gain-of Function” research in Wuhan, China when he insisted that the U.S. “has not ever and does not now fund gain-of-function research in the Wuhan Institute of Virology.”

2)      More than 900 pages of federal documents reveal details of U.S.-funded research on various coronaviruses at the Wuhan Institute of Virology in China, including two previously unpublished grant proposals that were funded by the National Institute of Allergy and Infectious Diseases, which is headed by Dr. Fauci.

3)      Documents show that NIAID provided more than $3.1 million for bat coronavirus research to the EcoHealth Alliance, a New York-based nonprofit headed by Peter Dazak, including $599,000 to enable the Wuhan Institute of Virology to help identify and modify bat coronaviruses to infect humans.

4)      Fauci’s history in public health shows that he never should have been afforded so much power over the response to COVID-19.  In the 1980s, Fauci orchestrated fraudulent studies, and then pressured U.S. Food and Drug Administration (FDA) regulators into approving a deadly chemotherapy treatment he had good reason to know was worthless against the disease AIDS.  He also repeatedly violated federal laws to allow his pharmaceutical partners to use impoverished children as laboratory experiments in deadly experiments with toxic AIDS and cancer chemotherapies. 

5)      An official Congressional investigation of Dr. Fauci is long overdue.  Fauci orchestrated the disastrous American response to the COVID crisis with the U.S. racking up 20% of the world’s COVID deaths despite having only 4.2% of the global population.
